Executive chef Craig Will spent the last few years working and gaining experience in restaurants interstate and then in Hobart before being lured home to take on his first business partnership and Head Chef position at Stillwater's sister operation Black Cow Bistro in 2008.

His love of local produce and using fresh and seasonal wherever possible translates into an indulgent Contemporary Tasmanian menu.
